According to the ST149B automatic oxidation stability instrument, the food remains relatively stable in a short time under the environment of room temperature and airtight, and when the temperature is raised and pressurized, the obstruction of the food itself to the oxidation of oil will be weakened. After the sample is placed in the test chamber and sealed, oxygen is injected into the test chamber and the sample is heated. Hydrogen consumption is indicated by pressure reduction. The measurement is continued until a defined pressure drop is reached at a turning point. This result is called the induction period (IP), the length of time between the start of the test and the turning point, and it indicates the oxidation stability of the sample under test.
